Teaming Nics - Need New Network Switch - advise?

You just need a switch that supports 802.3ad which is the standard for setting up Link Aggregation. The M4100 series supports this per http://www.downloads.netgear.com/files/GDC/datasheet/en/M4100.pdf The 1810-24g supports it per http://h17007.www1.hp.com/docs/whatsnew/wingedfoot/4AA2-6799ENW.pdf

    Router recommendation for sports bar?

+1 pfsense sure. Build one from an old desktop or purchase one from pfsense.org, the purchased devices come with 1 year of commercial support. I'd recommend a ubiquti router but at the end of the day the only support is the forum and if you have a critical issue sometimes that isn't fast enough.

Need router with easy multiple DHCP reservations

PFSense does this well it's not off the shelf but hijacking another thread.... http://forums.smallnetbuilder.com/showthread.php?t=10473 Pretty inexpensive for a very powerful small router. You can always just toss it on a spare machine that has 2 NIC's just be wary the realtek issues.
