New Around Here
Need help on my setup. It’s not working well so I appreciate any help in a better configuration.

Too many devices connected via WiFi so need to wire TVs, work computer and PS.
One CAT 6 Ethernet from Router, to switch, to two routers. Not connecting.

I got a similar setup to yours, minus the switch in the middle and one router. For some reason I never did look to deeply into why putting a switch between the router an node has been was an issue for me, no matter.

Could you plug the WAN port of one of the upstairs routers to the wire coming from the downstairs router? If only to make sure the cable is good, as you try to add the one upstairs router as a node from the downstairs router via the AiMesh tab on the downstairs router GUI. If you did any kind of setup on the upstairs router, you'll have to do a hard reset on it before you'll be able to add it as a Mesh node.

You can try to add it with the switch in the middle first, after hard resetting an upstairs router. Also the make sure your using the WAN port to connect the upstairs routers (nodes) to the switch, as well.
