Recently setup a rt-ax86u pro and have noticed our iOS devices show privacy warning occasionally under WiFi, describing something about sending dns unencrypted, more often than my old router. I have scrubbed the net and can’t find a qualifying definition as to why this happens. Forgetting the network and reconnecting solves it for a while. I read that sometimes it’s a router config issue but I do not have any type of parental controls and dns is automatic through ISP. Is this anything to be overly concerned about? Is it the router or my isp?
 
Private Mac is on. I’ve heard it’s router related. I’ve heard it’s apple related. I’ve heard it’s ISP spying on you. Why would it seem to increase with new router?

Because the apple spyware has noticed a change on your network. Whilst their intention my be good (protecting the end user) it goes too far for me.
 
Worth a try, but probably not.
If you're using the same SSID as the old router you could possibly try removing the network from your device then reconnecting. Don't expect instant results.
 
iOS devices show privacy warning

I have about 30 iOS devices going through Netgate and Ubiquiti gateways and haven't seen any privacy messages (home) nor anyone reported any issues (business) yet. A mix of iPhones and iPads from last few generations.

Do a “forget this network” on the affected device/s wifi settings, & log back in.
Seems to fix it…..
 
Forget this network (a different SSID from prior router) works, then it returns few days later. Interestingly I have some latency then I check and it’s there.

It means the DNS requests are going out as clear text - I've seen this a couple of times, usually on wireless networks that have content filtering enabled - to do the filter, they cause DNSSEC to fallback to cleartext to apply the content filter.

Should also note, the content filter might not be the router itself, but something upstream - esp. if using the ISP dns - could always try using DoH/DoT to a publc DNS and see if things change.
