I am hoping to get it Wednesday and set it up by Sunday night.

I plan on installing 8GB memory first, then checking each HDD's idle3 values, then running some recommended diagnostics (can't recall which)
Then placing a COPY of my data onto the NAS. This will be 1 4TB RAID1 encrypted volume, and 1 unencrypted 18TB RAID5 volume.
Once my "important encrypted data" is on the NAS, and things appear stable I will make that my primary source for accessing that data.
I will monitor the smart stats on the HDD's every day.

Anything else I should do?
 
Don't install the RAM first. make sure everything works as desired then upgrade the RAM. The extra RAM will have next to zero affect on the setup or copy to NAS performance. If you replace the RAM first, you will always wonder if that is part of the initial issues you will likely find. It is a brand new hardware product, new HDD models, and a significant new rev of software, so there is a good chance of issues.

PS like your idea of breaking up your confidential data from your regular stuff. It will allow for better performance when you don't need the encryption
