OpenVpn: routing all traffic on Win 10 client question

I'm just a beginner with VPN, have set up TAP VPN server on a Asus RT-AC66U using Merlin's Firmware 380.66. Selected the "Direct clients to redirect Internet traffic" button. Installed OpenVpn 2.4 client on Win 10 PC and am able to access internet over VPN and also access the USB hard-drive attached to router after importing the ovpn file generated by the router.

As I want to use the Win 10 laptop securely on public wifi while travelling, I am wondering if only the browser is redirected over internet, or if I open Outlook email or MS Office whether they are also automatically routed over the VPN as well? What I want to achieve is that everything goes through the VPN while in public places.

On my phone [android] using an OpenVpn Client app there is a simple tick box in the client config to route all apps through VPN except calls to the local network (e.g. signing in to network and agreeing to usage terms at a coffee shop). However, I don't know how to achieve this with Windows 10 OpenVpn 2.4 client.

It is my understanding that all traffic on the windows laptop will go thru the VPN tunnel when using the OpenVPN client software. There are numerous articles that recommended using a VPN when connected to the internet over public WIFI to help secure and protect your traffic. I do not see any options in the windows client OpenVPN software to perform selective routing.

Thanks for the response. I think in my hours of searches I was using wrong search terms and only seemed to find complicated details I couldn't understand. Your reply helped me to search more effectively and find explanations.
