Sorry for my lack of knowledge.

We did this during a training session. Created a 2nd ethernet port on a Mac Mini with an adapter and arranged the settings so the server would be the router.

What is the name for what I want to do so I can start searching the web and manuals to start learning :)

My first response was 'Why ?' You can buy a real router or two for the price of a mac mini.
 
Or for professional level training, buy an old Cisco or Juniper rotuer on eBay and dive into those arcane command lines.
