Self-hosting a Jitsi or Signal server?

Eventhough the world is "opening back up" after CoVid-19 lockdowns were imposed around the world by governments, I'm fully expecting that to be the case again, and probably more extremely this next time (2nd Wave).
So, I've been considering all the jittery, stuttery video calls and Skype/Zoom sessions against my pretty good connection and remarkably capable router that's been tweaked up with great firmware and various scripts, and I've wondered:

"Can I self-host a communication server on my router and bypass all the public ones that get overloaded when everyone is working from home?"

Asterisk is included in Entware...that might do the trick.
Jitsi gives you the option of self-hosting a server of your own Jitsi but that probably needs to be entware'd
Signal...well, that took a bit of digging, but they do have a GitHub and webpage that doesn't say you can't...but again, probably needs to be entware'd

I guess what I'm looking for is opinions on what's the best, most robust, most secure way to talk with people moving forward...anyone?
Are the benefits what I'm expecting them to be? what might be the drawbacks that I'm not aware of/considering?
 
Would make more sense to host this on something like a Pi, which will have more RAM and CPU power than what your router can provide - and also be far more secure.
