Advice for special scenario

Those bridges are pure directional and 802.11n. As I said, my server is moving around and rotating so I cannot rely on one directional bridge. Also, I need it to be 802.11ac.

well that same product family, and others, have ones with an antenna connector for whatever.
11ac as a hard requirement suggests some over-optimism, IMO.

Well, it's not a hard requirement... But given the scenario, with video streaming, and that all devices are ac... For me it just make sense to keep it that way.
Anyhow, what do you mean by over-optimism?

The antennas may be removable but it doesnt stop the radio from recieving or transmitting using that slot. Its best to buy as many directional antennas as you need. If your AP has 6 and your client 3 than you need 9 antennas. For best results make sure the client and AP have the same number of antennas. If there are 3 each than they need to be pointing to one another.
Directional antennas have their sizes. If you're near the room and want to cover it i suggest 90 degrees or less. Do some Pythagoras calculations to determine if it covers the area.

If the antennas you use are big and sensitive, start with a low tx power first (on both client and AP).

I don't understand the above.
Excluding exotic (not ready for prime time) steered-beam antennas in WiFi, we have varieties of MIMO-supporting antennas and they're most always omni-directional (horizontal plane).
Replacing these with directional antennas, e.g., "patch" (dipole arrays in a thin box), don't make sense for MIMO, esp. multiple.

Simplify! OP said the "server" is mobile within a room. Not sure how the WAN connection happens - perhaps it's cellular.

Actually there is no WAN, everything happens in the intranet.

Stevech, are you saying it is better to have omni with MIMO support than directional without it?
