Sure, with dedicated hardware, you can ensure that the CPU is fast enough to support the 1Gbps download speeds or more, with no hit to performance as with these underpowered consumer products. :)

Out of curiosity, what would be a good hardware setup to put OpenWrt on and include a wireless access point?
Get an x86 PC, and connect external APs to it. Miracles can't happen - if you need to handle a heavier workload, then you need a beefier CPU.
 
The Belkin RT3200 isn't as powerful as the AX86/88, right?
1.35 GHz Cortex A53 - that will be a good bit slower than a BCM4908's 1.8 GHz Cortex A53.
 
You won't find anything significantly faster than a BCM4908 in that market segment. Newer QCA at 2.2 GHz might be a bit faster, but it's the same architecture, only with a slighly higher clock. You have to build you own based on an x86 CPU to get any significant performance jump.
