Most, but not all, AX class routers are moving to 3.0.0.6.xxx level firmware
Can you cite a reliable source for this information?
In my opinion: Most, but not all (look VLAN supported models: https://www.asus.com/support/FAQ/1049415), AX class routers do NOT move to firmware level 3.0.0.6.xxx.
reason to NOT use them together if I use the AC86U as just an access point
There aren't. Use it and enjoy.
I like to buy a ASUS RT-AX86S - Router Gaming AX5700 WiFi 6
Is this a good choice?
Yes.
Yes yours is the "S" - not familiar with that one to make a comment unfortunately.
"S" is good.
The 's' version, hardly.
"S" is good. And RT-AX86S is better than RT-AX68U.
I will buy a ASUS RT-AX86U Pro
Great choice.

Asus wants a common firmware base for its many models (for a long time now) and RMerlin has stated that 3.0.0.6.xxx is the future too. 3.0.0.4.xxx is being effectively abandoned. The writing is on the wall.

All 'value' is placed in relationship to pricing and other available options.

The 's' variant isn't a good choice when other choices are available, including the 'u' variant of that model.

Some may find saving $10 or $15 as 'value'. I do not.

The models that 'sing' do so for a reason (the total package they offer), not for the individual specifications that may appear similar to other, 'better', models.

I never said you did. Only the sentence above that one.
