Can't get 2gbps to my unraid server

When I run a speedtest on the router, I get 2gbps results. I am connected via a 1 meter Cat5e cable that came with the router to a server that reports:

Apr 26 17:22:51 Tower kernel: igc 0000:05:00.0 eth0: NIC Link is Up 2500 Mbps Full Duplex, Flow Control: RX/TX

which makes me think that It should get full speeds, but it's capping out at 1gbps on speed test. About to pull out my hair. Any ideas?
 
Router model? Firmware version? How is the router's WAN connected? How exactly are you performing the speed test?
 
Router is a RT-Ax88U Pro. On todays merlin fw. 2.5 wan to modem. 2.5 lan to server. Im running a speed test through a docker image for open speed tests.org.
