Done and done. Everything is humming along just fine.

Last night I read a piece about DoT leaking the domain in the certificate, Makes one wonder if there is even a point in using alternative settings outside of potential reliability \ uptime issues.
 
You're overthinking it. Your devices start "leaking" information the moment you connect to Internet. My home setup uses Unbound straight to root servers. My other networks use OpenDNS straight to closest local servers. Never had an issue.
 
Agreed. It was just more of a realization so to speak. I just happened to come across the link reading through other posts. I can already see a DNS leak to my ISP when using Cloudflare. I believe this is called a transparent DNS proxy or I have a setting wrong. I don't see it when using my VPN though so that's good.
 
Your ISP knows what you do even without seeing your DNS requests. When you use VPN, they know you use VPN and the VPN provider. The VPN company knows what you do when you use VPN. Cloudflare has your entire browsing history. As I said above, you always "leak" information to someone, most of the time to many. The only way to stop that is to unplug the cable. As always - you have a choice.
