Are all these open ports needed to be open and what are they for please?

That would depend on what was running on your network. And, what you needed your devices to accomplish too.

How do you see those ports as being open? Is this in a log file or did you do a port scan elsewhere?

You can just as easily google each open port and learn for yourself what they are for. I don't think you will get too many detailed answers on something so basic here. (But I will be glad to be proved wrong).
