Only their Gigafast services use VoIP to deliver phone service. Superfast packages use traditional DSL/POTS.
Interestingly they claim that various 3rd party voice services will not work with your own router when used with Gigafast. I don’t understand how they can claim that, they would have to be actively blocking those services which is bizarre. I’d be tempted to say someone has misunderstood the restrictions and written the wrong thing on the website! https://support.vodafone.co.uk/Broa...use-my-own-router-with-Vodafone-broadband.htm
I guess first suggest which package you are using. But the answer in both cases is you CAN use a 3rd party router. Gigafast does require some unusual config compared to other ISPs (well advertised if you google - most relevant example out there https://forum.vodafone.co.uk/t5/Oth...er-on-Vodafone-Gigafast-and-does/td-p/2660071).
As for using their Home Phone service. My personal view is land lines are dead, use your mobile and save yourself some money! If you really want to keep your landline number port it to a dedicated VoIP provider and have it forwarded to your mobile (or use a physical SIP Phone/ATA if you insist on having a separate phone at home).
None of the above is an issue with Superfast packages though as the phone is still delivered the old fashioned way. If you really want to use VF for your home phone with Gigafast it’s likely possible if you use your own ATA but I’ve not seen anyone able to extract the required configuration details from VF Support (https://forum.vodafone.co.uk/t5/Broadband-connection/Using-Asus-router-However-telephone/m-p/2652009).
