Running OpenVPN server and client simultaneously

Sorry if this question has been asked many times but all the threads I read was just adding to my confusion :D

Those two examples are too advanced for what I'm willing to achieve here.

I just bought an ASUS router supported by MerlinWRT (great firmware, thanks to RMerlin and everybody involved), and planning to use AirVPN as my VPN provider.

First question :

What I want to know is, how can I set up my router to connect to the VPN provider server, while at the same time connect my phones. tablets or whatever to my router while Im away from home?

Is it just as simple as set the normal OpenVPN client via port 1194 UDP with the default subnet from my provider, and set the OpenVPN server with different port and subnet to serve my devices?

Is this achievable via the router GUI or I have to do it from the command console?

Second question :

I have set up a plex media server and have been accessing it with a simple port forward in my old router, do I have to change my network layout if I want to keep accessing it? Or can I exclude the plex server from the VPN tunnel and keep the simple old forwarded port?
