I have a AC68 running the latest merlin and wanted to see if I could move my internet only IoT devices into a separate VLAN. The devices are spread around my LAN, some are wired, some wireless. Is this possible? Any chance on a user friendly version making it into the GUI?

The short answer is: No (other than for IPTV support).

Is it possible to add VLAN's using SSH with Asus Merlin?

The long answer is: If you search the forums you will find many posts where people have done some very low level "hacking" of the router to create VLANs for their own specific purposes. But you need to use undocumented/unsupported commands which vary between different router models, and you really need to understand what you're doing. So essentially, you have to work it out for yourself. A better solution might be to use a firmware that has VLAN support built into the GUI, like Tomato.
