Hi just wondering if those routers on Merlin support WPA3, and cake/other QoS by default?

Asuswrt-Merlin doesn't change anything around Wi-Fi. Your clients must support WPA3 as well. WPA3 requires PMF - your older devices may not be happy with it. Cake is there with the usual no NAT acceleration limitation. Expect up to ~400Mbps WAN-LAN throughput on this router.
