Forgive the ignorance, but I am guessing that the ASUS Router needs to be in "router" mode to be able to provide this functionality? I currently have the RT-N66U, but I have it acting as an AP behind my wired router. I have been curious to dabble with VPNs

Instead of using it as an AP double NAT it behind your primary router then you can experiment with the VPN. I run a VPN in a double NAT setup and it works fine running a VPN client.

What would you recommend if you don't want/need wifi? Thanks

That depends on what you want to do with the VPN including the through put you are expecting. Not much is being done with SOHO wired routers with fast processors. You probably would need to look at a Pfsense router. Otherwise just turn the WiFi off on an ASUS router.
